Soufflé is a light, airy cake that originated in France in the early 18th century. It is regarded as a cornerstone of French cooking. The Greenbriar Inn offered traditional baked soufflés on its first menu in 1967. Later, in the 1970's, The Greenbriar's version of a frozen soufflé began appearing as a wonderfully light and refreshing summer dessert.
