Raspberry Pistachio Napoleon    $ 9

Known in France as mille-feuille or "thousand leaves" for its many flaky layers of pastry surrounding its custard cream, the Napoleon is thought to have been originally created in southern Italy. The name of the pastry comes from the French adjective to describe something from Naples, Napolitain. Food historians typically place the creation of Napoleons in 19th century Europe but the puff pastry in the dessert may also be a descendant of phyllo, the pastry dough known to ancient Middle Eastern and Greek cooks. The great French chef and pastry artist Careme was the first to popularize the dessert in the early 1800s, but even then, he described it as being "of ancient origin." In the mid-1970's, the Napoleon was a feature on several of The Greenbriar Inn's dessert menus.
